INGREDIENTS
- 1/2 cup cashews, soaked for 10-60 minutes
- 3/4 cup hemp seeds
- 1/4 cup nutritional yeast
- 1 tsp lemon zest
- 1 tbsp apple cider vinegar
- Juice 1 lemon (approx. 3 tbsp)
- 1 tsp sea salt
- 1/2 - 3/4 cup almond milk (or any unsweetened plant based milk)
- Linguine (or your choice of pasta)
- Hemp Gold Seed Oil
- Fresh herbs (Parsley, Dill, Basil)
- Fresh rocket, black pepper and hemp parmesan to serve)

METHOD
- Place all ingredients into a high speed blender (start with 1.2 cup plant milk), blend until smooth adding more milk until smooth.
- Cook pasta to packet instructions.
- Drizzle a little hemp oil over the pasta. Pour over sauce and mix well. Add in chopped fresh herbs.
- Serve with some cracked black pepper, squeeze of lemon, fresh rocket and hemp Parmesan.
Note; You can add other veggies like mushrooms, kale, zucchini, spinach, broccoli…
