INGREDIENTS
For the Pesto:
- 1/4 cup hemp seeds
- 1/2 cup brazil nuts or walnuts
- 1/2 clove garlic
- 1 cup kale, approx
- 3 cup basil, approx
- Juice + zest 1 lemon
- 2 tbsp nutritional yeast
- 1 tsp sea salt
- 1/2 cup Hemp Gold Oil
- 2 medium sized zucchini
- 1 cup cherry tomatoes
- Hemp parmesan to garnish
METHOD
Place all the ingredients except the oil into a food processor or blender, add a couple tbsp of oil and pulse until combined, gradually add the remainder of the oil pulsing until you reach the consistency you want. Adjust seasoning to taste.
Using a spiraliser for the zucchini to make spaghetti or using a potato peeler and peeling the zucchini into ribbons. Add to a bowl and toss with the pesto. Add in the cherry tomatoes, top with some sprouts and a squeeze of lemon juice and enjoy. - The perfect Summer salad!
*You can also add in some actual spaghetti to make this a heartier meal.
