Crepes with Berries & Yoghurt

Ingredients

  • 3/4 cup Certified Organic Plain Flour
  • 2 tbsp Certified Organic Hemp Flour
  • 1/2 cup milk of your choice
  • 2 eggs or two flax/chia eggs
  • 1/2 lemon
  • 1 tbsp maple syrup
  • Coconut oil (amount as needed)
  • 1/2 cup strawberries, chopped
  • 1/2 cup blueberries
  • 1 tbsp dark chocolate, shaved
  • 1 tbsp yogurt of your choice
  • 1 tbsp Certified Organic Hulled Hemp Seeds

  •  METHOD

    Pour the berries into a saucepan, squeeze in the lemon and add the maple syrup. Bring to the boil then turn down and simmer until berries are soft. Mix the flour, hemp flour, milk and egg together until smooth. Heat a frying pan with a little oil then add 1/4 cup of the batter. Swirl the pan around until you have an even layer then cook for just over a minute on each side. Do the same with the rest of the batter. Top the crepes with the berries, yogurt, chocolate and hemp seeds.
