Hemp & Mixed Berries Cupcake

INGREDIENTS

  • 1 cup self-raising flour
  • 1 cup of sugar
  • 1/4 cup of Hemp Seeds
  • 2 cups of mixed berries
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/4 cup coconut oil, melted
  • 1/2 tsp salt

For topping:

  • 2 cups vegan cream cheese
  • 1/2 cup mixed berries

METHOD

Preheat oven to 180C. Line a 12 hole muffin tin with paper liners. Put all dry ingredients in a large bowl and mix well. In a separate bowl, mix wet ingredients until combined. Add wet ingredients to the dry ingredients and stir gently until combined. Fill the muffins cups 3/4 of the way up. Bake for
25-30 mins or until an inserted tooth pick comes out clean. To decorate mix cream cheese and berries and spread on top with berries and Hemp seeds.
