Ingredients:
- 3 cups raw spinach
- 3 cups broccolini, cut into bite-sized pieces
- 2 tbsp mint leaves
- 2 tbsp parsley leaves
- 3 apples of your choice, diced
- ½ cup dried cranberries
- ½ cup sunflower seeds, shelled
- 1 cup walnuts, chopped
- 1 cup pecans, whole
- ½ cup gorgonzola cheese, crumbled
ACV Vinaigrette
- ¼ cup apple cider vinegar
- ½ cup hemp oil
- 2 garlic cloves, microplaned minced
- 1 tbsp maple syrup
- Salt & pepper
Method:
Let broccolini sit in boiling hot water for 3-5 minutes. Plunge into ice cold water.
In a large bowl mix together all the salad ingredients.
In a small bowl, whisk together all the vinaigrette ingredients.
Drizzle vinaigrette over the salad and toss.
