These little numbers are cupcakes that Simon made using the waste ingredients from the fresh juice.
They were meant to be savoury but he forgot halfway through and turned them into sweet ones when he topped them with hemp butter cream!
- 1 banana
- 1 lemon juice only
- 75g brown sugar
- 4 tbls flax or chia egg
- 150ml veg oil
- 100gm hemp protein
- 75gm all purpose flour
- 1/2 tsp bicarb
- 2 tsp baking powder
- 1 cup waste veg from juice like beetroot ginger etc
- Handful of hemp seeds
Butter cream
- 250g Plant based butter
- 450g icing sugar
- 50ml juice from morning juice
- Handful hemp seeds
- Pop in the oven on 200 for 17 mins.
