Breakky Salad

INGREDIENTS

 

  • 1 ripe avocado, diced
  • 1 large handful mint leaves
  • 1 large handful coriander leaves
  • 1 small red chilli, finely sliced
  • 2 tbs hemp seeds
  • 1 handful pistachios
  • 1/3 cup buckwheat groats, soaked in water overnight
  • 1/4 red onion, finely sliced
  • 2 kale leaves, chopped finely
  • 1/2 lemon
  • Drizzle of hemp oil
  • Sea salt and black pepper to taste
  •  

    METHOD

    Throw all the salad ingredients in a bowl. Season generously with salt and pepper, drizzle with oil and squeeze in the lemon. Toss and serve.
